Grilled Mojo Pork Tenderloin Recipe

Grilled Mojo Pork Tenderloin makes a quick & easy weeknight dinner that is both light and fresh. Tender slices of fresh pork are topped with a spicy, zesty Cuban mojo sauce.

It’s officially Summer!!! Are you as excited as I am? I’m ready to throw open all the windows, let in the fresh air, turn on the grill and sip Pinot Gris on the patio!

Grilled Pork Tenderloin Medallions with Mojo Sauce

I love this Mojo Sauce on everything… It’s very similar to chimichurri sauce, without the oregano. Loaded with fresh herbs (parsley and cilantro), garlic, spicy jalapeno peppers and a bit of vinegar for that perfect tang, it will brighten up any dish you spoon it over.

But the best part? It only takes 5 minutes to make – Just load everything up into a blender or food processor and let it whirl away until it reaches that perfect, saucy consistency.

Today, I’m serving mojo sauce over some tender grilled pork medallions. “Medallions” = fancy word for slices of pork. Pork is part of a nutritious, balanced diet, and grilling is the perfect cooking method to plate up a delicious, mouthwatering meal for your family!

This light and fresh dinner will be on your dinner table in less than 20-minutes. Meaning, more time to enjoy the aforementioned glass of Pinot Gris. 🙂

Mojo Pork Tenderloin

Rather than roasting a whole pork tenderloin like I might normally do, I took a pork tenderloin and sliced it into 1-inch thick pieces. By slicing the pork into medallions, it cooks up super-fast on your grill. Just 2-3 minutes on each side gives you that perfect sear while maintaining the juiciness of the meat.

How to grill pork medallions:

  • Heat the grill to 450-degrees.
  • Cook for 2-3 minutes per side, or until a meat thermometer reads 145-degrees.
  • Let rest 3-minutes before serving.

Note: It’s a misconception that pork must be cooked until the juices run clear and the meat is white. This results in overcooked pork! The USDA states that pork is safe when cooked to an internal temp of 145-degrees F. It will still be light pink inside.

Ingredients

Mojo Sauce:

  • 1 bunch cilantro chopped
  • 1/2 bunch parsley chopped
  • 2 cloves garlic minced
  • 1 lime juiced
  • 1 jalapeno diced
  • 1/4 cup olive oil
  • 1 Tbsp white wine vinegar
  • Salt to taste

Instructions

Mojo Sauce:

  • Place all ingredients in food processor or blender and process until desired texture is reached.

Pork Medallions:

  • Slice the pork into 1-inch thick medallions and season with salt and pepper.
  • Heat a grill or grill pan to medium-high heat and brush with olive oil. Sear the pork for 2-3 minutes on each side, until golden and a digital meat thermometer reads 145 degrees F.
  • Serve pork medallions with mojo sauce spooned over the top, or on the side.
