Grilled Pork with Mojo Sauce is a quick and easy weeknight dinner idea. Tender pork pieces are quick grilled and topped with a spicy and zesty Cuban mojo sauce. Yum!
Place all ingredients in food processor or blender and process until desired texture is reached.
Pork Medallions:
Slice the pork into 1-inch thick medallions and season with salt and pepper.
Heat a grill or grill pan to medium-high heat and brush with olive oil. Sear the pork for 2-3 minutes on each side, until golden and a digital meat thermometer reads 145 degrees F.
Serve pork medallions with mojo sauce spooned over the top, or on the side.
