How?

  1. Making time to blend up green smoothies in the morning
  2. At least once a week, fixing a vegetable stir fry – It’s easy, yummy, and you can use any veggies you have in the fridge
  3. Salad, salad, salad!

It took me a bit longer than it should have to realize that salads don’t need to be boring. My latest obsession was this Fully Loaded Chipotle Chicken Salad – It’s even got a bit of ditalini pasta thrown in there, so it feels like a little bit of a cheat. A long time favorite has been this Thai Beef Salad – Spicy, tangy, and it’s got a bit of a crunch from the toasted rice powder on top. Seriously, I could survive on that salad alone.

So… Chicken… Beef… Let’s try something new today – Ahi Tuna!

Ahi can be a bit intimidating, because it’s generally served with a good sear on it, and rare in the middle. But trust me, you don’t have to be a fish monger or sushi chef to make this salad.

I’m using Bumble Bee SuperFresh® Seared Ahi Tuna with Garlic-Peppercorn Rub. It’s the first ever sushi-quality “thaw and serve” packaged seafood product. It stays frozen during the processing and is never fully defrosted or re-frozen during preparation, so its guaranteed quality is that of what you’d expect from fine chefs who know how to source the best product for their restaurants.

Bumble Bee SuperFresh® is a complete line of naturally-seasoned, restaurant quality, “fish-forward” prepared seafood solutions for the home. It raises the bar for what seafood lovers can expect from frozen food! You may have seen their Salmon and Tilapia in the frozen seafood section at your local grocery store. They’re packaged in their own parchment paper baking pouch, and go from freezer to table in under 25 minutes!

The Seared Ahi tuna is their newest variety. It’s lightly seasoned with just a few simple ingredients, seared and thinly sliced. You simply defrost in your fridge for a few hours and it’s ready to eat. It’s great with some wasabi and soy sauce, but it’s even better in this Ahi Tuna Salad with Creamy Wasabi Dressing!

Seriously – You’ll have this salad on the table in a hurry! It’s easy and quick to make. Dressed with a simple creamy wasabi-lime dressing that’s made with just 3 ingredients – Wasabi, lime juice, and mayonnaise. To plate it up, I’m serving the seared ahi on some mixed greens, with a bit of avocado. That’s it!

How pretty is she?! To gussy her up a bit more, I sprinkled on some sesame seeds and togarashi seasoning – But these add-on’s are totally optional. Dress her up or dress her down. Maybe you want to add some rice on the side, and a sprinkling of soy sauce… Or, add in some more veggies (cucumber, radishes) and swap out the mayonnaise for some olive oil.

No matter which way you fix this salad, I’m pretty sure it’ll help shake up your basic salad routine. Plus, there’s not too many dishes prettier than this, that you can fix in 15 minutes flat!

Ingredients

  • 12 oz . Bumble Bee SuperFresh® Seared Ahi Tuna
  • 1 lime
  • 1 avocado
  • 1 - 2 teaspoons wasabi paste
  • 2 tablespoons mayonnaise
  • 3 ounces mixed salad greens
  • 2 teaspoons sesame seeds for sprinkling (optional)
  • 1 teaspoon togarashi for sprinkling (optional)

Instructions

  1. Halve, pit, and thinly slice the avocado. Halve the lime. Squeeze the juice of half the lime over the avocado to prevent browning.
  2. In small bowl, whisk together the mayonnaise, a squeeze of lime juice, and the wasabi paste (to taste).Thin to a dressing-like consistency with 1-2 tablespoons water, then season with salt and pepper.
  3. Plate the ahi tuna on the mixed greens with the avocado on the side. Sprinkle with the sesame seeds, togarashi and drizzle with wasabi-lime dressing.

WINE PAIRINGS:

  • Try a dry Riesling or Gewurztraminer with this dish, the acidity and light sweetness will pair amazingly well with the spicy wasabi and delicate ahi.

Seriously great timing with this post as Summer looming always makes me want to eat more fish and veggies. When reading in I kept thinking – I love seared tuna but can NEVER get the sear right. She did this perfect! Hahaha… I was so relieved to see the Bumblebee product. I’m going to be buying them OUT.

There’s a whole lot of deliciousness in those photos. I love the switch from warm-hearty stews of the winter to the fresh, crisp salads that spring brings.

Before the Mr. started his assignment in Shanghai we had been eating Ahi tuna at least every other week (usually as a poke bowl. . .but we also love a good seared tuna). It’s so simple to make but it always feels so elegant. So naturally I am loving this salad (and now finding myself with an Ahi tuna craving). And I am dying over that Wasabi dressing. . .I bet it’s pure heaven.

You can bet we will be having this once the Mr. gets back from Shanghai (two weeks to go. . .yippee!). He’s been craving salads big time. . .so this will definitely be a winner for him (and me. . .but you probably already could guess that)..

Of course Courtney – I think I got lucky with this avocado. I get avocado envy quite often too! Have you seen the beautiful flowers that some people are able to make? Avocado goals.
