In all honesty, I envisioned this burrata recipe to be an appetizer, served with crostini and shared with friends. But then I realized that it also makes and amazing lunch that serves one… I justified it as a burrata salad since it’s served with dressed arugula and a pea puree on the side.

However you choose to serve this burrata, I can guarantee that you’re going to love it!

What is Burrata Cheese?

Burrata is made from mozzarella. The outside is a solid mozzarella shell, while the inside is soft and creamy, made from a combination of mozzarella scraps and cream. It is shaped into balls and sold in the specialty cheese section of grocery stores, normally packaged liquid filled containers.

Mozzarella vs. Burrata

Fresh mozzarella is a semi-soft cheese made from cow or water buffalo milk. Burrata is made from mozzarella, but it is formed into a pouch that’s filled with cream and scraps of mozzarella, giving it a creamy, stringy center that’s melty and delicious.

How to Serve Burrata

  • I served this burrata cheese with a pea puree and arugula salad. It’s delicious as an appetizer spread over crostini, but it can also be eaten as a burrata salad, on its own.

Instructions

  • Zest lemon.
  • Blend all the ingredients for the pea puree together. Season with salt and pepper, to taste. Set aside.
  • In small bowl, mix baby arugula, olive oil and lemon juice. Set aside.
  • To plate, spoon pea puree onto plate, arrange alongside arugula salad and spring peas. Top with burrata. Sprinkle with olive oil, salt and pepper and lemon zest.
  • Serve with crostini or your favorite bread or crackers.
