I’m making the best of all the fresh berries that I’ve been finding at my farmer’s market lately. Just look at the gorgeous blackberries and blueberries that I’m topping this salad with. I mean, how pretty are they? And, as the base for this crunchy salad I’m using a Garden Vegetable Chopped Salad Kit from Taylor Farms (click here for $1 off). It’s loaded with veggies that are packed with Vitamin A & C like, broccoli, cauliflower, red cabbage and carrots. They give this salad such a great texture and unlike lettuce, they won’t get soggy on you, meaning that you can pack this salad in the morning for lunch and have it taste just as fresh as when you first made it.

Adding to that great crunch are the other yummy ingredients in the salad kit – sunflower seeds, tangy dried cranberries and smoky bacon. Plus, that dressing! Sweet and tangy slaw dressing that just ties in all those ingredients perfectly. I could just stop right there and be a happy camper, but instead, I decided to take it all one step further and fully load it up with turkey meatballs, some sliced avocado, sweet peas and crumbles of goat cheese.

The turkey meatballs are simple and healthy. I’m baking them in the oven instead of frying them, and I’m keeping them pretty simple flavor-wise so that they don’t compete with the other flavors going on in the salad. They add some extra protein to the salad kit and make it a full meal deal.

Of course feel free to play around with this salad by adding your favorite ingredients. Swap in some strawberries for the blackberries, use some fresh mozzarella instead of the goat cheese, or even skip turning on the oven all together and use some prosciutto in place of the turkey meatballs.

Ingredients

  • 2 bags Taylor Farms Garden Vegetable Chopped Salad
  • 1 avocado thinly sliced
  • 1 cup sugar snap peas
  • 1 cup blackberries
  • 1 cup blueberries
  • 4 green onions thinly sliced (greens only)
  • ½ cup goat cheese crumbled
  • Kosher salt and pepper to taste

Turkey Meatballs:

  • 1 pound ground turkey
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/4 cup chopped parsley
  • 1 clove garlic minced
  • 1/4 cup onion minced
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

Turkey Meatballs:

  1. Preheat oven to 400° F. Lightly grease a sheet pan with oil and set aside.
  2. In a bowl, mix all ingredients together thoroughly with your hands. Roll into about 20 meatballs and place on pan. Bake until golden brown, about 20 minutes or until cooked through and not pink in the middle.

Assembly:

  1. Combine veggie blend, avocado, snap peas and berries in a large bowl. Drizzle with dressing; toss gently to coat. Arrange about 2 cups greens mixture on each of 4 salad plates. Top each serving with turkey meatballs, green onions and goat cheese.
