Using SAUTE function of Instant Pot, brown sausage. Remove + set aside.

Add onions and season with cajun seasoning. Saute until tender, about 10 minutes.

Add garlic and celery and cook until softened and translucent, about 2-3 minutes.       

Add beans, sausage and water to cover. Add bay leaves, Tabasco, black pepper + cayenne.

Seal Instant Pot and set to cook on HIGH pressure for 35 minutes. Let pressure naturally release.

Season with additional cajun seasoning, salt and scallions. Serve over rice. Enjoy!
