This Roasted Spatchcock Chicken with Potatoes & Cabbage cooks up in one skillet for an easy  delicious dinner that's perfect for any night of the week. 



  • 4-6 pound whole chicken spatchcocked
  • 4 Tablespoons olive oil
  • 3 teaspoons kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons black pepper
  • 1 1/2 teaspoons poultry seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 5 cups shredded green cabbage
  • 1 ½ pounds Yukon gold potatoes cut into 1-inch chunks
  • 1 yellow onion diced
  • 3 bay leaves


  1. Preheat oven to 425 degrees.
  2. Combine olive oil with spices in small bowl and mix well. Rub half of this mixture on the chicken.
  3. Toss the cabbage, potatoes and onion with the remaining spice mixture and bay leaves. Arrange in a large skillet or rimmed baking sheet.
  4. Place chicken on top of the vegetables, breast side up.
  5. Roast for 45-60 minutes, or until the temperature of the breast meat registers at 165 degrees.
  6. Transfer the chicken to a cutting board and let rest for 10 minutes. Gently toss the potatoes & cabbage and return to the oven while the chicken rests.
  7. Carve the chicken and serve with roasted potatoes & cabbage.
