This Burrata Recipe with sweet pea puree & arugula can be served as an appetizer with crostini or as a salad. It's a delicious dish perfect for spring.
Blend all the ingredients for the pea puree together. Season with salt and pepper, to taste. Set aside.
In small bowl, mix baby arugula, olive oil and lemon juice. Set aside.
To plate, spoon pea puree onto plate, arrange alongside arugula salad and spring peas. Top with burrata. Sprinkle with olive oil, salt and pepper and lemon zest.
Serve with crostini or your favorite bread or crackers.
