These Mango Lassi Popsicles are the perfect treat for a warm summer day. Creamy mango and vanilla yogurt combine with tangy lime, and spices of ginger and cardamom.
2cupsmangoespeeled and cubed (approximately 2 mango)
1tsp. grated fresh ginger
1tsp. ground cardamom
1/2tsp. Born Sweet Zing™ Zero Calorie Stevia Sweetener2 packets
Grated zest and juice of 1 lime
1cupvanilla whole fat Greek yogurt
Instructions
Purée mango, ginger, cardamom, Zing™ Zero Calorie Stevia Sweetener, lime zest, lime juice, and 1/3 cup of the Greek Yogurt in a blender, until smooth. Place this mixture in fridge for at least 30 minutes to stiffen up a bit.
Layer the popsicle molds with alternating layers of mango and yogurt. Freeze for 4-5 hours, until firm.
