rinsed and drained

Dressing:

Instructions
In a small bowl, whisk together the dressing ingredients.
Add chickpeas, avocado, jalapenos and shallot to a large bowl. Pour dressing over this mixture and toss gently to combine.
Top with cotija cheese and cilantro and serve.
