Shrimp Biryani

INGREDIENTS for Biryani Gravy: 

– vegetable oil – yellow onion – cardamom pods – cloves – cumin seeds – fresh ginger – garlic – cumin powder – cinnamon powder – garam masala – smoked paprika – diced tomatoes – chopped cilantro – chopped fresh mint – salt and pepper

How To Make Biryani Gravy: Caramelize onions in a large skillet on medium-high heat. Once golden, set aside.

Add additional oil to the pan and saute the cardamom pods, cloves and cumin seeds until fragrant, about 30 seconds. Add the ginger and garlic, and saute for another 30 seconds or so. Then, add the tomatoes, cilantro, mint, cumin, cinnamon, garam masala, paprika, and salt and pepper to taste. Stir and simmer the mixture for 5 minutes.

Add the caramelized onions and marinated prawns to the skillet, and cook for 5-6 minutes, over medium heat, until the prawns are just cooked through.
