Notes
How to make ahead and store
Once they’re cooled to room temperature, transfer the tomatoes to an airtight container and store them in the refrigerator for 1 or 2 weeks. They also freeze well for up to 6 months. Let the frozen tomatoes thaw in the refrigerator before reheating them in the air fryer or microwave.
Tips and variations
Slice the cherry tomatoes in half to help them cook faster or leave them whole. If they’re still on the vine, leave the vine intact for an enhanced garden-fresh flavor.
Line the air fryer basket with a layer of parchment paper for easy cleanup.
You’ll know the cherry tomatoes are perfectly cooked when they’re blistered, a bit juicy, and lightly browned in some spots.
Roast the tomatoes with fresh garlic cloves or sprigs of fresh oregano and/or rosemary.
Swap the individual herbs with a pre-mixed Italian seasoning blend instead.
Garnish the roasted tomatoes with freshly grated parmesan, gremolata, a balsamic reduction, pesto, crumbled feta cheese, or more fresh herbs.
