These easy air fryer Hasselback potatoes are drenched in garlic herb butter, giving you an almost addictive crispy-on-the-outside, pillowy-on-inside snack or side dish in no time.
Wash and scrub the potatoes. Slice the potatoes thinly leaving a half an inch base at the bottom.
In a small bowl, combine the melted butter, Italian seasoning, and garlic.
Place the potatoes in the air fryer basket and brush some of the garlic herb butter on top. Sprinkle the potatoes with salt and pepper.
Cook at 350 degrees for 15 minutes. Brush with the butter mixture again, and continue cooking for 10-15 minutes longer, until tender.

StoringIf you’re lucky enough to have leftovers, you can store them in an airtight container in the fridge for 3 to 4 days. They’re best reheated in the air fryer at 350ºF to retain their crispy edges.Tips and tricks
Leave the potato peel on! Just remember to wash and scrub the potatoes really well before you start cooking.
Spray the potatoes with cooking spray to make the potato skins extra crispy.
If your potatoes are rolling around in the air fryer basket, slice off a small piece from the bottom to create a flat surface.
Leave space in between each potato in the air fryer. This helps the heat circulate evenly, yielding crispy and golden potatoes. Work in batches if the basket is too small.
Variations
Use fresh herbs– Swap the dry Italian seasonings for a blend of fresh chopped parsley, basil, thyme, chives, and/or dill.
Cheesy potatoes– After brushing the second layer of herb butter on top, sprinkle the potatoes with shredded cheddar cheese or grated parmesan.
Add bacon– Sprinkle pieces of dicedcrispy baconorprosciuttoon top for an irresistible salty crunch!
Dairy free– Use olive oil instead of melted butter.
