INGREDIENTS for Spaghetti alla Nerano 

– sunflower oil – medium zucchini – fresh basil – salt – extra virgin olive oil – spaghetti – parmesan cheese

1. Fry the zucchini in sunflower oil until golden brown, about 5-6 minutes. Set aside on paper towels to drain.

2. Combine the fried zucchini with basil and salt, to taste. Drizzle with olive oil.

3. Cook the pasta until al dente. Reserve 2 cups of pasta cooking liquid.

4. Add the cooked pasta to a large skillet over medium low heat. Toss with the cooked zucchini, adding pasta cooking liquid, as needed.

5. Add the parmesan, and continue tossing, until the pasta is coated in the parmesan and zucchini and the sauce is nice and creamy. Season to taste.
