This Pineapple Moscow Mule is a five-minute escape to the tropics, blending the sweet tang of fresh pineapple juice, the spicy kick of ginger beer, and the crisp base of vodka. It's the ultimate customizable cocktail - effortlessly refreshing for a quiet evening yet bold enough to get a party started!
Add 4 ounces pineapple juice, 1 ½ ounces vodka, 1/4 lime juiced and ice to a copper mug. Top with 4-6 ounces ginger beer to fill. Garnish with a slice of fresh pineapple and mint sprig, if desired.

Tips and Tricks
Once assembled, serve your pineapple Moscow Mule immediately. Left at room temperature for too long will result in the ice melting and diluting the flavor of your cocktail.
Bruise or muddle the mint before adding it as a garnish to release the aromatic oils and improve the cocktail's aroma.
To preserve the carbonation and fizz, never shake or mix the ginger beer in a shaker. Instead, add the ginger beer last to the copper mug or glass and stir gently.
Use plenty of ice since a traditional Moscow Mule should be ice-cold. Fill your copper mug with ice to about half an inch from the top for maximum chill without diluting the flavors too quickly.
For the classic Moscow Mule experience, serve it in a chilled copper mug. This not only makes the drink look great but also keeps it very cold for longer.
Variations
Type of vodka - I’ve used plain vodka, but you could opt for a pineapple-infused vodka for a stronger tropical flavor.
Different liquors - Feel free to use tequila (“Mexican Mule”), bourbon (“Kentucky Mule”), gin (“Gin Buck” or “Gin Gin Mule”), rum (“Dark ‘n Stormy” when using dark rum), or Irish whisky (“Irish Mule”).
Pineapple Moscow Mule with ginger ale - You can use ginger ale, but it will result in a much sweeter cocktail with a much milder ginger flavor. For the traditional spicy bite and balanced flavor, I always recommend using ginger beer.
Grilled pineapple garnish - Kick your presentation up a notch with a slice of grilled pineapple! Heat your grill or grill pan to a medium temperature. Lightly oil the grates and arrange the pineapple wedges in a single layer. Grill for 2-3 minutes on each side, until they are tender and have nice grill marks.
