This soup is deliciously creamy and flavorful. It is made with lots of pantry staples, carrots, onions, celery, Italian seasoning, and a splash of cream.  It’s easy to get together for a delicious and nourishing weeknight meal.

INGREDIENTS for Creamy Italian Quinoa Soup 

– Olive oil – Onions & garlic – Carrots & celery – Bone broth & tomato sauce –Chickpeas & quinoa – Canned diced tomatoes – Italian seasoning – Red pepper flakes – Fresh spinach and cream – Parmesan cheese – Salt & pepper

In a large saucepan saute the vegetables over medium-high heat until they are soft.

Add stock, chickpeas, quinoa, tomatoes, tomato sauce + seasonings. Stir to combine. Simmer for 20-25 minutes.

When ready to serve, stir in spinach and cream. Divide into bowls and top with grated parmesan. Enjoy!
