5 Minute  Udon Soup

INGREDIENTS for Udon Soup

– udon noodles – sesame oil – olive oil – fresh grated ginger – garlic – water – dashi packets – low-sodium soy sauce – mirin – salt For Topping: – green onions – togarashi (optional)

Prepare noodles according to package directions, and drain. Meanwhile, in a medium saucepan saute the garlic and ginger until it becomes fragrant, about 1 minute.

Add the water and the dashi packets. Bring to a boil then simmer for 2-3 minutes. Remove the dashi packet. Add the soy sauce and mirin and stir to combine. Season with salt. Stir in the cooked noodles. Top with green onions and togarashi, as desired, and enjoy!
