Ingredients needed

  • Puff Pastry – Look for this in the freezer section of your grocery store near the frozen pie crusts. You’ll need to thaw it before using.
  • Brie Cheese – You’ll want a full wheel of brie. It can be between 8-12 ounces.
  • Jam – Use your favorite! Red currant, raspberry, blackberry, etc.
  • Egg – This gets brushed on the puff pastry to give it that 🌟beauty shot🌟 gleam.

  • Raspberry Preserves
  • Black Currant
  • Blueberry
  • Strawberry
  • Apricot Jam
  • Fig Jam
  • Blackberry
  • You could even top your baked brie with some Pumpkin Puree!

How to make it

Making baked brie is really easy!

  • Roll out a thawed puff pastry sheet.
  • Place a wheel of brie in the middle.
  • Top with jam.
  • Fold it all up like a package.
  • Brush it all with an egg wash so that it gets nice and golden.
  • Bake in a 400-degree oven for about 35 minutes.

FAQs

Do you take the rind off brie before baking?

It’s best to keep the rind on during baking as it will help the cheese from melting all over the place. The rind is edible. However, if you don’t enjoy the flavor, you can slice off the top layer of the brie before baking.

Should brie be at room temperature before baking?

Nope! You can go ahead and bake it straight from the fridge. The oven will gently heat it to be creamy + delicious!

How do you thaw puff pastry?

If you have the time, it’s best to thaw the puff pastry overnight in the fridge. However, if you’re crunched for time, you can thaw a sheet of puff pastry on your kitchen counter. Just let it thaw until it’s pliable enough to unfold without cracking. It should take about 40 minutes.

Tips & tricks

  • Be sure to let your baked brie cool for 5-10 minutes after baking. This will ensure that your brie firms out a bit, so that it doesn’t ooze out all over when it’s cut into.
  • When brushing on the egg wash, be sure to wipe away any egg that pools under the brie so you don’t end up with scrambled eggs.
  • If you’re not a fan of the rind of brie, you can slice off the top of the wheel.
  • I like to garnish my finished dish with some fresh herbs like rosemary, sage or thyme.

Baked Brie with Jam

Equipment

  • Baking Sheet
  • Parchment Paper

Ingredients

  • 1 sheet puff pastry (1/2 a box, thawed)
  • 1 8-12 ounce wheel Brie cheese
  • ⅓ cup jam (red currant, raspberry, blackberry, etc. )
  • 1 egg (mixed with one tablespoon of water)

Instructions

  • Preheat oven to 400 degrees.
  • Place wheel of brie in the middle of the puff pastry.
  • Add jam on top of the brie.
  • Gently fold over the brie to cover it completely. Use your hand to gently press the edges against the brie and neaten up the sides.
  • Move the brie wheel to a parchment lined baking sheet.
  • Brush on the egg/water mixture, wiping away any egg collected under the brie on the baking sheet.
  • Bake for 35-40 minutes or until golden brown.
  • Allow to cool for 5-10 minutes before serving.

    Brie is one of the cheeses I miss after having to go dairy-free… although I will still enjoy it now and then. I used to make baked brie in puff pastry for almost every gathering we hosted, and I miss it! LOVE your addition of the Hero Fruit Spread, and your baking tips. Beautiful & yummy app spread!

    I cannot find a Brie wheel! Can I use soft Brie without the rind? I can buy Gouda with the rind, but would that work? I so want to make this but can’t find a brie wheel! Help!

      Hi Joyce – Unfortunately, brie without the rind will melt all over the place 🙁 Have you looked in the deli case near the hummus, etc. That’s where I normally find it.
