Hello! I’m Jessica and I’m delighted Erin invited me over to share this recipe for Pork Chops in Wine Sauce.

I share my favorite recipes and best kitchen tips to encourage us all to gather around the table more often with good food and great company. My husband and I live in North Carolina just outside of Charlotte and we are in the process of adopting a beautiful little boy from the Philippines. When I’m not in the kitchen, you can usually find me curled up with a latte and a good book or a food magazine.

When Erin invited me over to guest post, I knew immediately I had to post one of my favorite new recipes using wine: Pork Chops with Dijon-White Wine Sauce and Onions.

As a food blogger, my temptation is to add a million ingredients and employ a thousand cooking techniques in each recipe just because I can. But over the last few months I’ve been finding I enjoy recipes more when they have only a handful of carefully selected ingredients that pair really well together and offer a big flavor boost. The simplicity is beautiful, and it also makes for smoother, more approachable weeknight dinner prep.

Wine is usually the first thing I grab when I want to create a big flavor profile without using a lot of ingredients. And it doesn’t hurt that cooking with wine is a clear invitation to drink wine while we cook! I used my favorite Pinot Grigio to make these flavorful, tender pork chops, but you could use any dry white wine that you love.

How to Make Pork Chops in Wine Sauce

To make this recipe, we start by searing the pork chops in a hot skillet. My preference is cast-iron, but you can use any oven-safe pan for this. Once the pork chops are seared on each side, we remove those and add our sliced onions to the pan. The heat is lowered and the onions cook until they are softened and just beginning to caramelize. Once that happens, the onions come out and it’s time to make the delicious sauce.

Start by carefully pouring white wine into the hot pan to deglaze it. Then add Dijon mustard, thyme, grated garlic, and lemon and combine to make a beautiful, flavorful sauce. The pork chops and onions go back in and everything goes into the oven to finish cooking. If your pork chops are thin, you could probably complete the cooking on the stove, but if you have nice thick pork chops I recommend the oven step so you’ll get the most even cooking.

The sauce keeps the pork chops from drying out as they bake, which can happen easily with pork, and the flavors are perfectly balanced. The onions are sweet, the wine is tangy, the lemon and thyme are the perfect bright flavor boost, and Dijon offers a spicy, flavorful backbone to the sauce.

This is the kind of meal that you could serve to guests on a weeknight with a nice salad and some bread and a chilled glass of white wine. They won’t have to know how easy it was to make and they will be so impressed by your fancy dinner on a weeknight. I hope you enjoy!

Pork Chops with Dijon-White Wine Sauce

Ingredients

  • 1 TBSP Butter
  • 1 TBSP olive oil
  • 2 in Pork Chops (bone-)
  • Salt
  • Pepper
  • 1 Onion (sliced)
  • 2 TBSP Dijon Mustard
  • 1 cup White Wine (I used Pinot Grigio)
  • 1/2 Lemon (juice only)
  • 1 leaves Thyme Sprig (only)
  • 1 Clove Garlic (grated or finely minced)

Instructions

  • Preheat oven to 350.
  • Heat butter and olive oil in a cast-iron skillet or other oven-safe pan over medium-high heat.
  • Use a paper towel to dry pork chops as much as possible, and season generously with salt and pepper. When oil and butter are hot, sear pork chops seasoned-side down in oil. Season top of pork chops and flip to sear. Remove pork chops.
  • Lower heat to medium-low and add onions. You may need to add a little more oil to the pan. Let onions sauté and slowly soften and brown, about 10-15 minutes. Once onions are soft and beginning to caramelize, remove from pan.
  • With pan over medium-low heat, carefully pour in cup of white wine and deglaze bottom of pan. Add Dijon mustard, thyme leaves, lemon juice, and garlic and stir to create a sauce.
  • Return pork chops and onions to pan and spoon sauce over pork chops. Place pan in oven to finish cooking, about 7-10 minutes depending on the thickness of your pork chops.
  • Remove from oven, serve pork chops with onions and sauce, and enjoy!

    This is a new favourite, I’ve made it twice in the last 7 days. I didn’t have fresh thyme, so I subbed for fresh parsley which I did have. I liked it very much with the parsley.
