And just like that, poof – Thanksgiving is over. Goodbye pumpkin recipes. It’s time to make room for the Christmas cookies.
Let’s focus on those baking recipes that bring holiday cheer. This year, I’m thinking up fun and unexpected combinations that bring a little something new to the table. Take these Pretzel Cookies with Butterscotch Chips for example. It’s a bit of a riff on the traditional chocolate cookies… I never really cared too much for chocolate anyways. I’m the kind of person that would take blondies over brownies 100% of the time.
These cookies are throwing one of my favorite combinations of sweet and salty right in your face with butterscotch chips and salty pretzels. They also solve that age old dilemma of whether crunchy or chewy cookies rule the world. In this case, you can have a chewy cookie, with crunchy bits of pretzel running through it. Win-Win. And then, win some more just because these cookies are just so darn delicious!
Set some of these cookies out for Santa at Christmastime and he just may reward you with a bottle of Veuve Clicquot Rosé. On second thought – Make that a magnum.
Pretzel Cookie Ingredients
The ingredients are simple – It’s pretty much your standard chocolate chip recipe, but we’re throwing in some crushed up pretzels and butterscotch chips into the dough. Bonus, if you’ve got a half eaten bag of pretzels on hand, those broken little bits in the bottom of the bag exactly what you need for this recipe. Otherwise, if your pretzels are pristine, put them in a Ziploc baggie and smash them with a rolling pin – It’s a good way to relieve that holiday stress.
And, to keep things local this holiday season – I’m using one of my favorite local products: Bob’s Red Mill Organic Unbleached White Flour is freshly milled right here in Oregon. It is not enriched with any additives and it’s the same high protein flour used by professional bakers. Bonus: It just so happens to produce fabulously light and airy baked goods.
I guarantee you that these Pretzel & Butterscotch Chip Cookies will be the hit of any holiday party that you’re going to this year. And the year after that, on repeat.

Pretzel Cookies Recipe
Pretzel & Butterscotch Chip Cookies
Ingredients
- 2 1/4 cups Bob's Red Mill Organic Unbleached White Flour
- 1 tsp . baking soda
- 1 tsp . salt
- 1 cup butter (softened)
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 tsp . vanilla extract
- 2 eggs
- 1 cup butterscotch chips
- 3/4 cup chopped pretzels
Instructions
- Preheat oven to 375 degrees.
- Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in a large mixer bowl until creamy. Add eggs, one at a time, until combined. Gradually add in flour mixture until just combined. Stir in butterscotch chips and pretzels by hand.
- Spoon rounded tablespoons onto ungreased baking sheets.
- Bake for 9-11 minutes, until golden brown.

I love the salty sweet combo. When I was in college my roommate and I would eat sweet cookies with potato chips for a salty sweet fix. These look delicious, have to give a try soon.

Butterscotch and pretzels should ALWAYS go together. Seriously. I wouldn’t have thought cookies with those ingredients and would have likely made candy. I love that you combined them in a fresh and delightful way!
