For me, any day that begins with dessert is a good day. I’ll take it any way I can get it. Snagging a leftover brownie at 8am is not above me. But a sweet treat in the morning is a lot better when I can actually justify it…

This Healthy Strawberry Smoothie makes that justification totally possible. It’s dairy free, loaded with fresh fruit and natural protein, and will keep you satisfied until lunch – when you can go looking for that brownie again…

I’m using coconut milk instead of dairy-milk to give an extra creaminess and richness to this smoothie. This is the canned coconut milk, not the refrigerated kind that you’ll find in the cartons next to the regular milk. It’s thick, creamy and perfect for making these smoothies extra silky and decadent.

I wanted my Strawberry Smoothie to taste like Strawberry Shortcake. So I added in the flavors of baking spices that you’d typically find in a white cake – nutmeg, cinnamon and vanilla extract. Those three flavors are like a big warm hug to me.

A spoonful of almond butter adds some protein and additional richness to the smoothie, along with chia seeds to add some omega-3 and fiber. Feel free to swap out the chia seeds for your favorite nutritional boost – Hemp seeds or flax seeds would work here as well. Also, if you don’t mind your smoothie turning an unappealing shade of brown, you could also sneak a handful of spinach or kale in here too.

Feel free to be creative with this recipe. You can swap in other fruits in place of the strawberries. Blackberries, blueberries, raspberries and peaches would all be delicious in this smoothie recipe.

The dessert-fiend in me would jump out of bed every day for one of these Strawberry Shortcake Smoothies!

Strawberry Smoothie Ingredients

  • Frozen Strawberries
  • Banana
  • Light Coconut Milk
  • Almond Butter
  • Chia Seeds
  • Vanilla Extract
  • Nutmeg
  • Cinnamon

How to Make a Strawberry Smoothie

  • Add frozen strawberries, banana, coconut milk, almond butter, chia seeds, vanilla, nutmeg and cinnamon to blender. Process until smooth.

Ingredients

  • 1 cup frozen strawberries
  • 1 banana (frozen)
  • 1 3/4 cups light coconut milk (from the can)
  • 1/4 cup almond butter
  • 2 Tablespoons chia seeds
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  • Place all ingredients in blender and process until smooth.
