Salted Caramel Popsicles

These Salted Caramel Yogurt Popsicles were created out of pure necessity this week… I went to the dentist for gum grafting surgery and I cannot eat solid food for one month!

Yep ONE MONTH.

And… no chewing with the left side of my mouth for two months. This blog may just be renamed Spoons & Smoothies.

Although I can still drink wine, so we’re good there! Priorities…

Ovrehead shot of four popsicles on plate drizzled with caramel.

In my hunt for things to eat besides Instant Pot Chicken Noodle Soup and jello, I came up with the idea to make yogurt popsicles. I’d seen a lot of recipes like this popping up on the internet but had yet to give them a try. Plus, I had some of my delicious salted caramel sauce (Rick’s favorite) sitting in the fridge.

So, I ordered this popsicle mold, waited for my 2-day shipping, and Salted Caramel Yogurt Popsicles were born.

How to make caramel popsicles

Step 1

Make the Salted Caramel Sauce

  • Make Salted Caramel Sauce – or you can use store bought caramel sauce.
Caramel swirled with yogurt.

Step 2

Swirl Caramel with Yogurt

  • Swirl caramel with yogurt.
Filled popsicle mold ready to go in freezer.

Step 3

Fill Molds + Freeze

  • Fill popsicle molds and freeze until firm.
  • Enjoy!

I may just be eating these every day for the next few weeks, maybe swapped out with my Cherry Pineapple Popsicles occasionally… And, it can be pretty much guaranteed that in 3 weeks and 1 day, I will be eating a ribeye steak and gnawing on some good bread (with the right side of my mouth, of course).

Have any of you ever been on a soft food diet? Any tips for some good things to eat? I’d love to hear suggestions!

Serves 8 popsicles
Created by Platings and Pairings
Prep Time: 10 minutes mins
Cook Time: 0 minutes mins
Total Time: 10 minutes mins

Equipment

  • Popsicle Mold

Ingredients

  • 2 1/2 cups vanilla yogurt
  • 1/3 cup whole milk
  • 1/2 cup salted caramel sauce

Instructions

  • Heat half of the salted caramel in the microwave for 20 seconds, until runny.
  • Place the yogurt and milk in a small bowl and combine with the heated caramel sauce. Stir to combine thoroughly.
  • Slightly heat the remaining caramel, just slightly, so that is pourable, but not runny. (About 5-10 seconds). Glob this caramel into the yogurt mixture and, using a knife, make large swirls so that there are large ribbons of caramel running through the mixture.
  • Fill the popsicle molds with this mixture and freeze until firm.
  • To release the popsicles from the mold, run them under lukewarm water for about 30 seconds.

I’ve seen cashew milk today at the store and I was thinking to get it. I wonder how it taste. And I love that we have so many plant based milk versions… cashew, almond, soy etc. These popsicles are delicious, caramel is my favorite. Pinning:)

I agree Sarah – Salted caramel is definitely a weakness of mine! Try it on Pumpkin Pie for Thanksgiving!

You had me at salted caramel. These look totally amazing! I can’t imagine not being able to eat solids for that long, but have heard stories from my husband who had his jaw wired shut after surgery and had to eat out of a straw. You’ll make it through!

At least I didn’t have to be wired shut – That would be absolute torture! I was still able to enjoy treats like these 🙂

We love Silk products in our home. It’s pretty much all we use. I’m sorry to hear about your dental surgery, but on the bright side, you get to eat soft things for a month. Soft things usually mean sweets and treats. 🙂

Thanks Bryon! I agree with you – It’s not all bad. As long as I can still enjoy sweet treats and wine!

My husband would love these!! He’s dairy-free and always feels like he’s missing out on summer ice cream treats. Thanks for creating this recipe!!

Of course Chrissie! I hope that he enjoys this!!! The salted caramel does have butter and cream in it, so there’s a little bit of dairy with that. You could always substitute roasted fruit for the caramel as well!
