Why you’ll love this recipe

This street corn ravioli is a celebration of flavors, combining smoky charred corn with a luxuriously creamy sauce that coats every piece of pasta beautifully. The dish comes together in about 30 minutes, making it perfect for busy weeknights, yet it’s impressive enough for entertaining. The contrast of textures keeps every bite interesting.

Ingredient notes

Ingredients for street corn ravioli labeled on counter.
  • Cheese ravioli – Refrigerated cheese ravioli works perfectly here, but you can use another kind.
  • Fresh corn – Two ears of corn, grilled until charred, provide that authentic street corn flavor. Frozen corn works wonderfully as a substitute; just char it in a hot skillet with a little oil.
  • Cilantro – Fresh cilantro adds brightness and that signature street corn taste. If you’re not a fan, fresh parsley makes a milder substitute.
  • Green onions – These add a mild oniony bite and a pop of color. You could also use chopped chives.
  • Jalapeno pepper – Diced jalapeno brings gentle heat. Remove the seeds if you prefer less spice, or leave them in for an extra kick.
  • Lime juice and zest – Essential for that tangy, bright flavor that balances the richness of the sauce.
  • Unsalted butter – Forms the base of the sauce and adds richness.
  • Garlic and shallot – These aromatics build depth in the sauce without overpowering the other flavors.
  • Chili powder and cumin – The spice blend gives the sauce warm, smoky notes that complement the charred corn beautifully.
  • Dry white wine – Adds acidity and complexity to the sauce. Dry vermouth works well too, or you can substitute with a splash of broth.
  • Heavy cream – Creates the luscious, velvety sauce that clings to the ravioli.
  • Salt and pepper – To taste.
  • Queso fresco – This crumbly, mild cheese is the perfect finishing touch. Cotija cheese is an excellent alternative with a saltier punch.
  • Tajin – This chili-lime seasoning adds an extra layer of flavor and a beautiful finishing touch.

How to make it

Grilled corn in bowl with cilantro, jalapenos, etc.

Step 1

Grill the corn

  • Preheat your grill (or grill pan). Place the husked corn directly on the grill and cook until it’s tender with some nice char marks, 8-10 minutes.
  • Once cooled slightly, cut the kernels from the cobs and transfer to a bowl.
  • Add the chopped cilantro, green onions, diced jalapeno, lime juice, and lime zest to the corn. Toss everything together and season with salt and pepper.

Step 2

Make the sauce

  • Melt the butter in a large skillet over medium heat.
  • Add the garlic, shallot, chili powder, cumin, and a pinch of salt and pepper. Cook until fragrant.
  • Pour in the white wine and stir, scraping up any flavorful browned bits from the bottom of the skillet.
  • Add the heavy cream, bring to a gentle simmer, and let it reduce by about half. This typically takes about 10 minutes.

Step 3

Cook the ravioli

  • While the sauce simmers, drop the ravioli into the boiling water and cook according to the package directions until they float to the top and are tender.

Step 4

Combine and serve

  • Stir half of the corn mixture into the reduced sauce, then season with additional salt and pepper to taste.
  • Gently fold the cooked ravioli into the sauce, tossing to coat each piece.
  • Serve topped with the remaining corn mixture, crumbled queso fresco, fresh cilantro leaves, and a sprinkle of Tajin if desired.

Other Sauces to Pair with Street Corn Ravioli

While this creamy street corn sauce is the star of the show, here are a couple of other sauce options that can add delicious variety to your dish:

  • Roasted Red Pepper Sauce – A smoky, slightly sweet sauce that complements the charred corn flavors beautifully while adding a vibrant color contrast.
  • Citrus Butter Sauce – A simple sauce made with butter, fresh lemon juice, and herbs that brightens the dish without competing with the street corn flavors.

Tips and tricks

  • Save some pasta water before draining. It’s great for loosening the sauce if it thickens too much.
  • Don’t skip the char. The smoky flavor from grilling the corn is what gives this dish its street corn authenticity. If using frozen corn, make sure to get a good char on it in a hot skillet.
  • Watch the sauce carefully. Cream can boil over quickly, so keep an eye on it and stir occasionally as it reduces.
  • Taste and adjust seasoning. The lime, salt, and spices should be balanced. Don’t be afraid to add more lime juice or chili powder to suit your preference.
  • Serve immediately! This dish is best enjoyed fresh, when the ravioli is perfectly tender and the sauce is at its creamiest.

Variations

Want to put your own spin on this street corn ravioli? Try these delicious variations:

  • Add protein – Stir in some cooked shredded chicken, chorizo, or black beans for extra heartiness.
  • Make it spicier – Keep the jalapeno seeds in and add a pinch of cayenne pepper or a drizzle of hot sauce.
  • Add fresh tomatoes – Toss in some cherry tomatoes with the corn mixture for a burst of juicy sweetness.
  • Grilled chicken version – Top with sliced grilled chicken breast for a complete meal.
  • Vegetarian protein boost – Add roasted chickpeas or crumbled plant-based sausage for extra texture.
  • Swap the pasta – Use tortellini, gnocchi, or any filled pasta you love.
  • Extra cheesy – Stir in some shredded Monterey Jack or pepper jack cheese into the sauce for an even richer finish.

Storing

While this dish is best enjoyed fresh, leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

To reheat, place the ravioli in a skillet over low heat with a splash of water or cream to loosen the sauce. Warm gently, stirring occasionally, until heated through. Avoid high heat as it can cause the cream sauce to separate.

I don’t recommend freezing this dish, as the cream sauce and pasta texture won’t hold up well to freezing and thawing.

Erin’s wine pairings for street corn ravioli

Elevate your street corn ravioli with these perfectly paired wines:

  • The bright citrus notes and refreshing acidity of Sauvignon Blanc cut through the creamy sauce while complementing the lime and cilantro.
  • Albariño offers zesty flavors and a touch of saltiness that echoes the queso fresco beautifully.
  • Pinot Grigio is light and crisp, and won’t overpower the dish while providing a clean, refreshing contrast.
  • A dry rosé with berry and citrus notes pairs wonderfully with the smoky, creamy, and slightly spicy elements.
  • If you prefer red, a lighter Zinfandel’s fruity character complements the corn and spice without overwhelming the dish.
