  • 1 pound orecchiette ( or other short cut pasta)
  • 2 cups beef broth (low sodium )
  • 3 ½ cups water
  • 4 ounces Gruyère (coarsely grated (about 1 cup))
  • 1 oz. Parmesan (finely grated (about ½ cup))
  • 1 Tbsp. Dijon mustard
  • 2 tsp. Worcestershire sauce
  • 1 Tablespoon sherry vinegar
  • Kosher salt and pepper (to taste)

Instructions
