Making marinated mozzarella cheese balls couldn’t be easier. All you have to do is toss the cheese in a delectable marinade made from olive oil, garlic, fresh herbs, and citrus, set them aside to marinate, and then dig in!
I know it’s hard to resist eating them straight from the jar, but I highly recommend saving a few to add to a salad, antipasto platters, charcuterie boards, and more.

Ingredients
- Mozzarella balls – Look for fresh mozzarella balls, often labeled as “bocconcini” or “ciliegine”. If you can’t find them, you can cut a fresh mozzarella block or ball into bite-sized pieces.
- Extra virgin olive oil – The rich and luxurious base of the marinade. Use the best quality “cold-pressed” olive oil you can find. It really makes a difference in the flavor of the marinade.
- Garlic
- Fresh basil and parsley – Fresh herbs are a must for a bright and refreshing Mediterranean flavor. Try not to use dried herbs as a substitute, as they don’t pack the same punch.
- Lemon zest
- Red pepper flakes – Add as much as you can handle if you like a bit of heat. If not, you can skip them altogether.
- Sea salt
How to make marinated mozzarella balls
First, drain the mozzarella balls in a sieve or colander over the sink, then pat them dry with a paper towel.
Whisk the olive oil, minced garlic, chopped herbs, lemon zest, red pepper flakes, and salt in a shallow bowl.
Add the mozzarella to the bowl with the marinade and toss until the balls are well coated. Set aside to marinate for at least 1 hour or leave them in the fridge overnight.

- Always drain the mozzarella balls and pat them dry with a paper towel before marinating. This way, the marinade won’t be watered down and the cheese will have a better chance of soaking in all of the flavors from the marinade.
- Fresh herbs bring a vibrant flavor to the marinade for mozzarella balls that dried herbs just can’t match. If you can, chop your herbs right before adding them to preserve their flavors.
