- Green beans – Look for fresh, vibrant green beans that snap when bent. About 1½ pounds will serve 4-6 people as a side. Trim the stem ends, but leave the tips intact for a pretty presentation.
- Anchovy fillets – These are essential for that classic Caesar flavor. Mince them into a paste so they dissolve fully into the dressing. If you’re not a fan of anchovies, you can substitute 1-2 teaspoons of anchovy paste or Worcestershire sauce for a milder flavor.
- Worcestershire sauce – This adds a salty, umami quality to your Caesar dressing.
- Parmesan cheese – You’ll need both grated and shaved Parmesan for this recipe. The grated cheese melts into the dressing for richness, while the shaved pieces add lovely little pockets of salty, nutty flavor throughout the salad. Use good-quality Parmesan and grate it fresh for the best results.
- Breadcrumbs – Make these from scratch using good-quality bread like a rustic sourdough or Italian loaf. The bread is tossed with olive oil, salt, and pepper, then baked until golden and crisp. Once cooled, it’s roughly chopped or pulsed into coarse crumbs that cling beautifully to the green beans.
- Mayonnaise – This forms the creamy base of the dressing. Use a good-quality mayonnaise for the best flavor and texture.
- Lemon juice – Freshly squeezed lemon juice is a must here. It brightens up the dressing and cuts through the richness of the mayonnaise and Parmesan.
- Garlic – Two cloves of fresh garlic, grated or minced, add that signature punch of flavor. Grate it on a microplane so it melds seamlessly into the dressing.
How to make it

Step 1
Make the breadcrumbs
- Toss bread cubes with olive oil, salt, and pepper on a baking sheet.
- Bake at 375°F for about 20 minutes until golden and crisp.
- Let them cool, then roughly chop or pulse in a food processor to make coarse crumbs. Set aside.

Step 2
Blanch the green beans
- Boil a large pot of salted water and add the trimmed green beans. Cook for 3-4 minutes until bright green and crisp-tender.
- Drain and immediately transfer to an ice bath to stop cooking.
- Once cool, pat them completely dry with a clean towel.

Step 3
Make the dressing
- While the beans cool, whisk together minced anchovies, grated Parmesan, mayonnaise, lemon juice, Worcestershire sauce, Dijon mustard, grated garlic, salt, and pepper in a large bowl.
- Taste and adjust seasoning if needed.

Step 4
Assemble and serve
- Add the dry green beans to the dressing and toss to coat.
- Sprinkle in the breadcrumbs and shaved Parmesan, then toss again gently.
- Serve right away while the breadcrumbs are still crunchy.
How To Make the Perfect Crunchy Topping
Skip the store-bought breadcrumbs! The homemade version in this recipe takes just minutes to prepare and makes all the difference. Here’s a closer look at why they work so well, and a few other crunchy options if you want to switch things up:
- Homemade Breadcrumbs (in this recipe): Cubed rustic bread is tossed with olive oil, salt, and pepper, then baked until golden and crisp. Once cooled, a rough chop or quick pulse in the food processor gives you coarse, craggy crumbs that cling perfectly to the dressed green beans. They stay crunchier and more flavorful than any store-bought version!
- Swap in crushed croutons: If you’re short on time, you can crush good-quality store-bought croutons into coarse crumbs and toast them lightly in a dry skillet with a drizzle of olive oil to refresh their crunch before sprinkling over the salad. For a more traditional crunchy element, make a batch of homemade croutons for your Caesar salad. Try my Air Fryer Croutons recipe for even faster results!
- Try toasted nuts or seeds: For a fun twist, swap the breadcrumbs for toasted pine nuts, slivered almonds, or even crushed pistachios. They add a wonderful nutty flavor and plenty of crunch without any extra carbs.
- Make it gluten-free: Simply use gluten-free bread to make the breadcrumbs, and you’ll have a completely gluten-free Caesar salad that no one will be able to tell is any different!
- Tortilla Strips: Learn how to make tortilla strips at home with just 3-ingredients! Apart from adding crunchy texture as an alternative to croutons for this Caesar salad, any leftovers could also be used as a topping for chili, soups, and other varieties of salad.
Tips and tricks
- Don’t overcook the green beans! They should be bright green and crisp-tender with a little bite. Cook them for just 3-4 minutes, then shock them in ice water to lock in that vibrant color and texture.
- Dry the green beans well. After their ice bath, make sure to pat the green beans completely dry. Any excess water will thin out the dressing and prevent it from clinging properly.
- Taste the dressing before adding it to the salad. This way, you can easily make adjustments to suit your preferences. Add more lemon for brightness, more anchovy for umami, or more salt to bring everything together.
- Make the breadcrumbs ahead. You can prepare the breadcrumbs up to 3 days in advance and store them in an airtight container at room temperature. Just be sure to add them right before serving so they stay crunchy.
- Make the dressing ahead. The dressing can be made 1-2 days ahead and stored in a jar in the fridge. Give it a good stir or shake before using.

Serving suggestions

It also makes a fantastic addition to a holiday table or summer cookout spread alongside grilled potato salad, coleslaw, and grilled vegetables.
Make ahead + storing
- Store any leftover green bean Caesar salad in an airtight container in the fridge for up to 2 days. Keep in mind that the breadcrumbs will lose their crunch over time, so it’s best to store them separately and sprinkle them on just before serving.
- If you plan to make the breadcrumbs ahead, go ahead and prepare them 2-3 days before serving, stored in an airtight container at room temperature.
- Likewise, the creamy dressing can be made ahead and stored in a jar in the fridge for up to 5 days. Give it a good stir or shake before using.

- Add some protein – Turn this into a hearty main dish by adding grilled chicken, shrimp, or sliced steak on top. A soft-boiled egg also makes a wonderful addition.
- Vegan green bean Caesar – Use a vegan mayonnaise and substitute the anchovies with 1-2 tablespoons of capers (rinsed and chopped) and a splash of soy sauce for that umami depth. Use a vegan Parmesan alternative or nutritional yeast.
- Kick of spice – Add a pinch of red pepper flakes to the breadcrumbs before baking for a subtle kick, or whisk a dash of hot sauce into the dressing.
- Gluten-free option – Use gluten-free bread to make the breadcrumbs, and you’ll have a completely gluten-free Caesar salad!
- Swap the greens – This dressing works beautifully on other vegetables too. Try it with blanched asparagus, smashed broccoli, or even shaved Brussels sprouts.
