Sweet and sour meatballs are a beloved dish by kids and adults alike and for good reason: they are the perfect balance of savory, tangy and sweet. In a large sauce pan, heat the olive oil and 2 TBSP butter over medium high heat. Once the butter has melted, add the garlic and cook for about 1 minute, until it turns golden and becomes fragrant.
Add the rice and toast the grains for 1 minute, until it becomes translucent.
Add the broth and salt and bring to a boil over high heat. Once boiling, reduce the heat to a simmer, cover, and cook for 15-18 minutes, until the rice is tender.
Remove from heat and let rest for 5-10 minutes. Fluff rice with a fork then stir in the remaining butter and parsley. Season with additional salt, to taste. Enjoy!
