I’ve tried several copycat recipes for these lettuce wraps in the past, but they didn’t quite do it for me. They were either too sweet, bland or didn’t have the right texture. But guys, I’ve hit the nail on the head with this one!!! Seriously… DEAD RINGER!
I even put together a recipe for the PF Changs Lettuce Wraps dipping sauce for you. The first night I made these, Rick told me that this was his FAVORITE recipe that I’ve ever made for him. That’s saying a lot – As I’ve been cooking him dinner (and making him wash the dishes) for over three years now! We’re a good pair that way.

What’s in PF Chang’s lettuce wraps?
- Ground Chicken
- Soy Sauce (or try swapping in some kecap manis)
- Mirin
- Oyster Sauce
- Rice Vinegar
- Vegetable Oil
- Water Chestnuts
- Shitake Mushrooms
- Garlic
- Green Onion
- Iceberg Lettuce
How to make them
- Prepare the marinade.
- Mix ground chicken, mushrooms, water chestnuts and garlic with marinade. Let sit 15 minutes.
- Heat oil in a large skillet over medium high heat. Add the chicken and sautee until fully cooked.
- Serve with lettuce cups and special sauce.
PF Chang’s lettuce wraps sauce ingredients
- Soy Sauce
- Rice Vinegar
- Chile Garlic Sauce
- Hot Mustard Paste
- Chili Oil
- Green Onions
Combine the soy sauce, rice vinegar, chili oil and green onions. For a mild sauce add 1 teaspoon of chili garlic sauce. For a medium sauce add 1/2 teaspoon of hot mustard plus 2 teaspoons chili garlic sauce. For a hot sauce and 1 teaspoon of hot mustard plus 3 teaspoons of chili garlic sauce.
What kind of lettuce do you use for lettuce wraps?
- I’ve used butter lettuce, little gem lettuce, romaine leaves and iceberg lettuce for these wraps. They all work great, so you can use whatever you have on hand or whatever you prefer. At PF Changs they use iceberg lettuce. In these photos, I used butter lettuce.
How to cut iceberg lettuce for lettuce wraps
- After years of making lettuce wraps, I finally learned how to cut iceberg lettuce so that you get full cups, and not little broken pieces. Instead of standing the lettuce up so the core is on the cutting board, lay it down. Then slice through the lettuce, perpendicular to the core.
- Then, pull the lettuce cups off the outside of this slice. Mind blown!

PF Chang’s Lettuce Wraps + Dipping Sauce Recipe
Ingredients
Marinade
- 3 Tablespoons soy sauce
- 2 Tablespoons mirin
- 1 Tablespoon oyster sauce
- 1 Tablespoon rice vinegar
Lettuce Wraps
- 1 Tablespoon vegetable oil
- 1 pound ground chicken breast
- 1 8-ounce can water chestnuts (drained and minced (about 1 cup))
- 10 fresh or dried shitake mushrooms (stems removed and chopped (about 2/3 cups). If dried, soak in warm water until soft, before chopping)
- 4 cloves garlic (minced or grated)
For Serving
- 1 green onion (thinly sliced, for garnish)
- Lettuce cups (for serving)
Special Sauce
- 3 Tablespoons soy sauce
- 1 Tablespoon rice vinegar
- 1 – 3 teaspoons chili garlic sauce
- 1/2 – 1 teaspoon Chinese hot mustard paste
- 1/8 teaspoon chili oil
- 1 green onion (thinly sliced)
Instructions
- Prepare the marinade by mixing all of the ingredients together in a small bowl.
- Mix the ground chicken meat, water chestnuts, chopped mushrooms and garlic with all the Marinade ingredients. Set aside for 15 minutes.
- Meanwhile, make the sauce. Combine soy sauce, rice vinegar, chili oil and green onions. For a mild sauce add 1 teaspoon of chili garlic sauce. For a medium sauce add 1/2 teaspoon of hot mustard plus 2 teaspoons chili garlic sauce. For a hot sauce and 1 teaspoon of hot mustard plus 3 teaspoons of chili garlic sauce. Stir well. Set aside.
- Heat the oil in a wok or saute pan over high heat. Once hot, add the chicken. Stir-fry the chicken, breaking it up with a spoon until cooked through.
- Spoon the chicken into lettuce cups and serve with the sauce on the side. Enjoy!

Is 10 CUPS of shitake correct? What is the “2/3” referring to exactly? Looking forward to trying this recipe.
Hi Susan – Sorry about that – There was a typo in the recipe card. It has now been revised to read that you should use about 10 shitake mushrooms and, once chopped, they should yield about 2/3 cup. Hope this helps. Enjoy!

Made this tonight for dinner…..oh so good! Had planned to make while we had guests for a few days but decided against it until I had tried them out myself before making for other’s. My mistake….they are delicious! Now I know our guests that like lettuce wraps, will love these.

Erin, I have been trying to make these with other so called “copycat” recipes but haven’t hit the mark yet. Making yours tonight. How much did you turn up the hot and spicy? I don’t like things spicy so would rather that be an option with dip. So just wondering if I need to omit something or use less of in the actual chicken filling?

I would like to try this! Question, I have never seen ground chicken here (japan). Can I sub regular chicken breasts instead (maybe poach and shred). I found ground Turkey and ground beef 🤔 would these work at all? I have never had this dish at of Chang’s

I can only find Roland’s chili oil at the store. I have chili crisp. I don’t know how to use these ingredients as I’m new to Asian cooking. Hope your answer goes to my email. Thanks. Sounds so good.
Hi Tamara – I’m not quite sure of your question. But, I use chili oil and sriracha, sambal oelek, or chili crisp for the “chili garlic sauce”. Hope that helps!
I see in the comments ppl are talking about the rice sticks but don’t see it in our recipe…. What is it for? Garnish? Where do you find these? Do you Cook them?
Hi Deborah – The original recipe included rice sticks that were fried for garnish. They’re a bit difficult to find, so I removed them from the updated recipe. However, you can purchase them on amazon I believe. Just fry them in a hot skillet of oil and they will puff up. You can then top your lettuce wraps with them. Cheers – Erin
the wrap was very good but i would like to sweeten up the sauce and cut down on the sodium, any suggestions ?
Hi Cindy – I would cut back on the amount of soy sauce used. You can also try using low sodium soy sauce, or swap in this kecap manis (sweet soy sauce).
