The garlicky cream and tomato sauce is really simple, yet as indulgent as a traditional alfredo sauce or vodka sauce. The best part is that it’s so much easier to make! It all comes together in one pan, just like my tortellini skillet lasagna, and is impossibly creamy, tangy, and cheesy.

Toss everything together in the skillet and dig into this delicious cheesy recipe! It’ll quickly become a staple you can rely on for lazy nights at home, a quick weeknight dinner, or when you’re craving comfort food.

Ingredient notes

The short list of easy ingredients is what makes this vegetarian tortellini recipe so great. Splurge on the higher quality items to enhance the flavors or keep everything as simple as possible! This is all you need:

  • Cheese Tortellini – Or, use any type of tortellini you prefer.
  • Marinara Sauce – You can use store-bought or homemade marinara sauce for this recipe.
  • Heavy Cream – If you have extra, you can freeze it! You can also stir in some half and half, though it won’t be as rich.
  • Garlic
  • Basil
  • Red Pepper Flakes – If you’re sensitive to heat, you can omit these.
  • Burrata Cheese – Look for burrata in the refrigerated “fancy cheese” section of your grocery store where you would normally find the feta.

Burrata vs. mozzarella

Burrata cheese and mozzarella cheese are very similar. Both come from Italy, have soft textures, are made from cow’s milk, and are so delicious. They do, however, differ very slightly in texture and flavor:

  • Burrata is still creamy but has a much softer texture and stronger flavor. The filling is very delicate, making it much better suited as a last-minute topping on salads, flank steak, and warm pasta.
  • Mozzarella is creamy but has a slightly firm texture. This makes it the better choice to shred and melt on top of pizza and chicken parmesan.

How to make it

  • Cook the tortellini in a pot of boiling salted water according to the package instructions. Drain and set aside.
  • To make the cream sauce, pour the marinara sauce into a large skillet and bring it up to a simmer. Stir in the heavy cream, basil, garlic, and red pepper flakes.
  • Add the cooked tortellini into the pan with the warm sauce. Toss to combine.
  • To serve, scoop the cheesy tortellini with tomato cream sauce into bowls. Top with burrata cheese and basil, then enjoy!

Recipe tips and variations

  • Set the burrata on the counter as you make this recipe. Room temperature burrata will melt quickly on top of the tortellini, making each bite deliciously cheesy and stretchy.
  • There’s always room for more cheese! Stir ricotta, parmesan, or mozzarella cheese in with the sauce-covered tortellini and top each bowl with extra parmesan.
  • To enhance the garlicky goodness, replace the fresh garlic with roasted garlic.
  • You can lighten up the dish by replacing the heavy cream with milk or dairy free milk (or creamer) but it won’t be as lusciously creamy.
  • Stir kale, spinach, or sun dried tomatoes into the dish for a little added nutrition.
  • To give this dish some added meatiness, replace the marinara sauce with bolognese sauce. Or, use meat-stuffed tortellini instead, or stir Italian sausage into the skillet.

What to serve with it

  • Fennel salad with chickpeas
  • Kale caesar salad
  • Arugula salad
  • Radicchio salad with olives and parmesan
  • Sous vide asparagus
