I’ve got to be honest, my favorite part of a salad is all the toppings that you can load it up with. Give me bacon. Give me chicken, Give me cheese… Give me avocado… Sometimes, my salads can be a bit more like a sandwich in a bowl… And this Summer Cobb Salad is just that – except it’s deceptively loaded with veggies.

For the base of my Summer Cobb Salad I used a Garden Vegetable Chopped Salad Kit from Taylor Farms. It’s loaded with veggies that are packed with Vitamin A & C:

  • Broccoli
  • Cauliflower
  • Red Cabbage
  • Carrots

So, with all of those nutrient packed veggies, we can afford to get a little crazy with the toppings, can’t we?

Note: Feel free to swap out the salad kit for 6 cups of chopped romaine lettuce.

I’m topping this beauty of a salad with:

  • Grilled Chicken
  • Grilled Corn
  • Bacon
  • Avocado
  • Hardboiled Eggs
  • Radishes
  • Sugar Snap Peas
  • Goat Cheese
  • Chives

To me, it just screams summer. Those bright colors, the fresh flavors and the smokiness from the grilled corn and chicken. And, to top it all off? An amazing cobb salad dressing… It’s tangy, creamy, bright and bold – Perfect for drizzling over all this yumminess! I would eat way more salads in my lifetime if there were all this loaded…

My plan of attack was to get the chicken and the corn going on the grill first. At the same time, I browned up some bacon on the stove and cooked a batch of hard boiled eggs in my Instant Pot. Then, I pulled the chicken and corn off the grill and let it rest while I prepared the dressing. It comes together really simply with the help of your blender – just a minute or two is all it takes.

Then you get to assemble – To me this is the fun part. It’s like creating a piece of artwork because you have all those beautiful ingredients to play around with. I like to split the snap peas in half, slice the radishes nice and thin and crumble that goat cheese over the top. And then, a sprinkle of chives on top gives that extra special something at the end.

Of course feel free to play around with the ingredients, customizing it to fit your tastes and what you have on hand… Swap blue cheese for the goat cheese, grill up some steak instead of chicken, use up the veggies that are stashed away in your refrigerator drawer…

Ingredients

  • 1 boneless skinless chicken breast
  • 2 ears corn husked
  • 6 slices crisp bacon chopped
  • 3 hardboiled eggs halved
  • 1 bag Taylor Farms Garden Vegetable Chopped Salad or 6 cups chopped romaine lettuce
  • 1 avocado diced
  • 1 cup sugar snap peas
  • 6 radishes thinly sliced
  • 2 Tbsp chives finely chopped
  • ½ cup goat cheese crumbled
  • Kosher salt and pepper to taste

Dressing:

  • 1 Tbsp water
  • 1/2 tsp sugar
  • 3/4 tsp kosher salt
  • 1/2 tsp Worcestershire sauce
  • 2 Tbsp red wine vinegar
  • 1 Tbsp lemon juice
  • 1/2 tsp fresh ground black pepper
  • 1/4 tsp Dijon mustard
  • 2 cloves garlic finely grated or minced
  • 2 Tbsp olive oil

Instructions

  1. Heat your grill to medium-high heat. Sprinkle chicken with salt and pepper. Place chicken and ears of corn on grill. Grill corn until slightly charred. Grill chicken 5 minutes on each side or until done. Let rest 10 minutes and then thinly slice chicken and cut kernels off ears of corn.
  2. Meanwhile, prepare your dressing. Combine all ingredients except the oil in a blender and blend. Slowly, with the machine running, add the oil and blend to incorporate.
  3. Combine veggie blend, avocado, grilled corn, snap peas, and radish in a large bowl. Drizzle with dressing; toss gently to coat. Arrange about 2 cups greens mixture on each of 4 salad plates. Top each serving with chicken, bacon, egg, chives and goat cheese.

Look for a fresh, fruity white wine like a Gewurztraminer or a Sauvignon Blanc.

    Oh, YUM! I love Cobb salads but the romaine or other pale lettuce in them isn’t very useful or nutrient-dense, so this is a great idea!
