When I’m wanting to eat a bit healthier, but I still feel like indulging, I reach for a bowl of this Cauliflower Fried Rice in place of my traditional bacon fried rice recipe. It’s so satisfying and packed with flavor. And even though this is a healthier version of fried rice, I’m still adding in some delicious bacon in there. It adds so much flavor to this dish. 

Basically I’m taking my standard fried rice recipe, but I’m making it low-carb and keto-friendly fried rice by swapping in cauliflower rice. I also halved the amount of bacon from my original recipe. But like I said, it’s still in there! 

Nowadays, you can easily find grated cauliflower in the produce or frozen section of any supermarket. But if you’d like to make your own cauliflower rice, it’s super simple. 

How to make cauliflower rice

Cut cauliflower into florets and working in batches, process it in a food processor until it resembles rice (you don’t want to crowd the food processor). Alternatively, you can grate the cauliflower using a box grater. 

Ingredients needed

  • Cauliflower Rice – You can make your own or use prepackaged fresh or frozen cauliflower rice.
  • Bacon
  • Eggs
  • Shallot
  • Garlic
  • Frozen Peas
  • Green Onions
  • Soy Sauce – Or, tamari or coconut aminos.
  • Oyster Sauce
  • Butter

How to make keto fried rice

  • Cook the bacon in a large skillet or wok until crisp. Remove from pan. 
  • Add eggs and scramble. Set aside with bacon. 
  • Add butter and saute shallot, garlic and peas. 
  • Increase the heat and add cauliflower rice, green onions, soy sauce & oyster sauce. 
  • Stir fry for 3 minutes, then return the bacon & eggs to the pan. Enjoy! 

Recipe tips

  1. Use what you have on hand. Don’t have shallots? Use onions and garlic. No bacon? Leave it out, just add in a bit more butter for sauteeing the veggies. Have some carrots in the fridge? Throw those in there too!
  2. Use a BIG skillet. This makes a lot of fried rice. You want to make sure things aren’t overflowing, and you want as much cauliflower in contact with the bottom of the pan as possible so that the excess moisture will evaporate.
  3. Get things HOT! Make sure that you have your heat turned up, and be sure to let that cauliflower get nice and crispy at the end. We actually want to fry the cauliflower rice.

Variations

  • Want a protein boost? Add in some sauteed or shredded chicken, shrimp, or pork. Or, add in some edamame or cubed tofu.
  • Boost the flavor by adding in a bit of sesame oil, ginger, chili oil or sriracha.
  • Add extra vegetables like broccoli florets, red bell pepper, jalapenos, or mushrooms.

What to serve with it

Wine pairings

  • Try a Prosecco or Gewurztraminer with this dish. Cauliflower and eggs can often be tricky to pair with wine, but these light, fruity varieties actually help to bring out all the salty, smoky flavors in this dish.

  • Heat a large skillet over medium heat. Cook the bacon, until crisp. Remove with a slotted spoon and let drain on paper towels.
  • Remove all but 1 tablespoon of the bacon fat from the skillet and increase the heat to medium-high. Add eggs and scramble. Once fully cooked, remove from pan and set aside.
  • Add butter to the now-empty skillet and heat until melted. Add shallot and garlic and season with salt and pepper. Sautee for 2-3 minutes, until the shallot has softened.
  • Increase heat to high and add in cauliflower rice and peas, stir to combine. Fry over high heat for approximately 3 minutes, until it’s getting nice and brown, and crispy.
  • Add the soy sauce, oyster sauce, green onions, bacon and eggs and stir to combine. Serve immediately.
