Ingredients
- 2 Tablespoons aji amarillo paste
- 1 small shallot (minced)
- 2 cloves garlic (peeled)
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt ( or sour cream)
- 1/4 cup crumbled feta (ricotta, or queso fresco)
- 1 Tablespoon ketchup (or tomato paste)
- 2 Tablespoons lime juice (plus more to taste)
- Salt and pepper (to taste)
Instructions
- Combine all ingredients in a blender or food processor and process until smooth.
- Season with salt and pepper, to taste. Transfer to a bowl and refrigerate until ready to serve.
