I grew up just about an hour south of Buffalo, New York and have definitely consumed my fair share of buffalo wings.
Maybe more than my fair share.
Everyone in our hometown had an opinion on who made the best wings.
In our house, the wings almost always came from The Cherry Lounge in Jamestown. My mom would pick up a to-go order (since us kids were too young to go into the bar) and bring them home for us.
But the best wings, in my opinion are from Guppy’s in Bemus Point, NY. Guppy’s was owned by my Aunt Sally and Uncle Mike and their wings were always the best. Crispy and spicy, with just the perfect kiss of butter. They’ve since sold the restaurant, but I was back a few summers ago and I have to say that the wings are still amazing.
Their buffalo wing sauce recipe is simple, and it’s always been the authentic way to make buffalo wings – using Frank’s Red Hot Sauce and butter. In my version, I added in a dash of Worcestershire sauce and Tabasco too.
Ingredients Needed
- Frank’s Red Hot Sauce – You want to be sure you’re using Frank’s Original Red Hot Sauce NOT Frank’s Red Hot Wings Sauce. The “wing” sauce already has a butter like ingredient mixed in with it.
- Butter
- Worcestershire Sauce
- Tabasco
How to Make It
- Combine melted butter with Frank’s Red Hot Sauce, Worcestershire sauce and Tabasco.
How to Make MILD Wing Sauce
- Use 8-ounces Frank’s Red Hot Sauce, 8 tablespoons butter, and a dash of Worcestershire sauce and Tabasco.
How to Make MEDIUM Wing Sauce
- Use 12-ounces Frank’s Red Hot Sauce, 6 tablespoons butter, and a dash of Worcestershire sauce and Tabasco.
How to Make HOT Wing Sauce
- Use 14-ounces Frank’s Red Hot Sauce, 4 tablespoons butter, and a dash of Worcestershire sauce and Tabasco.
How to Make Vegan Buffalo Wing Sauce
- To make vegan Buffalo Wing Sauce, replace the butter with a vegan butter substitute and replace the Worcestershire sauce with a vegan Worcestershire sauce (Annie’s makes a good one).
How To Use It
You’ll love this Buffalo Wing Sauce tossed with Air Fryer Chicken Wings, Baked Buffalo Wings, Smashed Potatoes or used in this Buffalo Tofu Bites recipe.
You can also toss it with these air fryer drumsticks or baked chicken legs.
This Buffalo Wing Sauce recipe makes enough to cover 2 pounds of chicken wings, with some sauce leftover for dipping.
How to Store It
If you would like to store the sauce, keep it in the refrigerator for up to three days. When you’d like to use it, you’ll need to heat it for about 30 seconds in the microwave, or slowly on the stove over a low burner. This is because the butter will harden in the refrigerator.
Recipe FAQs
Essentially wing sauce and buffalo sauce are the same. They are both mixtures that contain butter and hot sauce, and possibly some other flavorings like Worcestershire Sauce and Tabasco.
The true hot sauce for making wings is Frank’s Red Hot Sauce. Many purists won’t have it any other way.
Buffalo wings aren’t made with buffalo meat. Instead, the name comes from where Buffalo wings originated – Buffalo, New York. And, more specifically, the Anchor Bar, which is where they originated.
Oven baked or fried wings are tossed with buffalo sauce after baking, and after they have cooled a few minutes. Once tossed with the sauce, they should sit a couple minutes longer so that the sauce has time to adhere to the wings.
Air fried wings are tossed with buffalo sauce after air frying. Let them cool a couple minutes, then toss them with the sauce.

If you find that your buffalo sauce is too runny, try whisking in a tablespoon of cornstarch while the mixture cooks.
Buffalo sauce is keto friendly. Just be sure that the wings that you are coating in the sauce are not breaded.

MILD Buffalo Wing Sauce
- 8 Tablespoons Butter
- 8 ounces Frank’s Red Hot Sauce
- Dash Worcestershire Sauce
- Dash Tabasco Sauce
MEDIUM Buffalo Wing Sauce
- 6 Tablespoons Butter
- 12 ounces Frank’s Red Hot Sauce
- Dash Worcestershire Sauce
- Dash Tabasco Sauce
HOT Buffalo Wing Sauce
- 4 Tablespoons Butter
- 14 ounces Frank’s Red Hot Sauce
- Dash Worcestershire Sauce
- Dash Tabasco Sauce
Instructions
- Melt butter in a medium pan over medium-low heat until melted. Remove pan from the heat to prevent the sauce from breaking.
- Whisk in Frank’s, Worcestershire and Tabasco until smooth and well combined.
This is perfect, I’m not a fan of super spicy wings, so I really appreciate a recipe that gives you options for hot, medium, or mild. I’m probably somewhere between mild and medium on most things. I’ll definitely be keeping this recipe for the next time I make wings!

Would you not think that this recipe can be kept in the fridge…closed…for weeks with the amount of vinegar in the hot sause?
Did not like this recipe. I was worried about adding unsalted butter, so I added a little at a time. Just as I thought, it tasted like butter !
