Move over whipped feta! It’s whipped ricotta’s time to shine.

Ricotta cheese isn’t just for lasagna or cake recipes anymore. Whipping ricotta with lemon juice and heavy cream is a sweet and tasty way of lightening up this creamy and soft cheese. Spread some on a piece of crusty sourdough for a snack that’s full of protein, customizable, and so luxurious.

Blackberry Ricotta Toast is a creamy treat that’s really easy to make. The whipped cheese is piped on toasted bread with blackberry jam, then topped with Oregon blackberries, honey, and coconut flakes. It’s the sweetest summer breakfast, light lunch, or snack.

Fresh or frozen blackberries will work in this recipe. And I’m a huge fan of Oregon blackberries in particular. In the summer, we’re lucky to have fresh blackberries growing in our backyard, but they normally don’t take off until late in the season. So, I always have a bag of frozen berries on hand in the freezer. 

Fun Fact: Did you know that more than 90% of U.S. grown, frozen blackberries are from Oregon? With the perfect, fertile soils, warm days and cool nights, Oregon produces the most perfect berries.

Tip: The toppings don’t always have to be sweet! Add some avocado and everything bagel seasoning on top or go all out with smoked salmon and dill. The options are endless!

What is ricotta toast?

It’s simple: ricotta toast is whipped ricotta cheese spread on toast. The light and fluffy sheese spread is very luxurious-tasting and so much better than cream cheese. Take your ricotta toast up a notch by adding all kinds of sweet and savory toppings, like blackberries, smoked salmon, sliced fruit, and more.

What does ricotta taste like?

Ricotta is a soft and creamy cheese with a slightly sweet flavor. 

The best bread for ricotta toast

Crusty, thick, artisan bread is best when making ricotta toast because the creamy spread won’t seep through as easily (thus making the bread soggy). Sourdough is my top choice but you could also use ciabatta or baguette.

How to make blackberry ricotta toast

Start by toasting the bread slices. Set them aside. 

Next, make the whipped ricotta cheese. Add the ricotta, lemon juice, and heavy cream to a food processor and pulse until smooth and fluffy.

Transfer the whipped ricotta and blackberry jam to a piping bag.

To assemble the ricotta toast, pipe the cheese and jam mixture in large waves on the bread slices. Garnish with fresh blackberries, coconut flakes, and a drizzle of honey. Serve and enjoy!

Light and creamy whipped ricotta spread on toast pairs well with all kinds of sweet and savory toppings. Here are some ideas to get you started:

  • Olive oil, cracked pepper, and microgreens or arugula
  • Roasted cherry tomatoes or sun dried tomatoes with basil
  • Avocado slices with pickled red onions and everything bagel seasoning
  • Sliced cucumbers and dill
  • Guacamole and red chili flakes
  • Fresh strawberries, raspberries, blackberries, or blueberries with honey or maple syrup
  • Smoked salmon or lox with dill and red onion
  • Mango salsa
  • Sliced peaches, mango, or kiwi with honey and granola
  • Prosciutto and grilled peaches
  • Sliced pears or apples with honey and nuts
  • A poached egg and bacon

How long does whipped ricotta last in the fridge?

The whipped ricotta (with or without the berry jam) will last in the fridge for 1 or 2 days. Make sure to keep it in an airtight container. The leftovers can be enjoyed spread on more sourdough slices or as a dip with crostini.

Ingredients

  • 4 slices crusty whole-grain bread (1/2-inch thick, toasted)
  • 10 ounces ricotta cheese
  • 3 Tablespoons lemon juice
  • 2 Tablespoons heavy cream
  • 3 Tablespoons blackberry jam

To Garnish

  • Fresh blackberries
  • Coconut flakes
  • Honey

Instructions

  • For the Whipped Ricotta: Add the ricotta, lemon juice, and heavy cream, to the bowl of a food processor. Process until completely smooth, creamy and fluffy, 1-2 minutes, scraping down the sides of the bowl occasionally.
  • Add the ricotta mixture and blackberry jam to a piping bag with a large round tip or plastic ziploc bag (trim the tip off to pipe when ready).
  • Pipe the whipped ricotta into large waves on the toasted bread. Garnish with fresh blackberries, coconut flakes and a drizzle of honey. Enjoy!
