Hasselback potatoes are sliced crosswise multiple times, giving you slits to fill with all kinds of goodies, like garlic butter, shredded cheese, herbs, and bacon.

It’s like an upgraded baked potato that’s easier to stuff with flavor boosters. What’s even better is that they always end up being soft, flavorful, and buttery on the inside and crispy on the outside.

Why you’ll love them

My favorite way to cook Hasselback potatoes is in the air fryer. This easy method not only takes less time than the oven but also produces the same heavenly results: fluffy, buttery flesh on the inside and golden crackled potato skin on the outside. 

But what makes these air fryer Hasselback potatoes truly irresistible is the 3-ingredient garlic herb butter. Made with melted butter, Italian seasonings, and garlic, this dreamy butter sauce softens the potatoes while filling the flesh with amazing flavor. 

You can even change these flavors in all kinds of fun ways, too. Want to dress up the air fryer baby potatoes? Add your favorite toppings or serve them with a vibrant dipping sauce. You’re guaranteed to have a ton of fun with this recipe!

Ingredients

  • Small potatoes – Any variety of small potatoes, like baby potatoes, red potatoes, or fingerlings, work best because they cook faster in the air fryer. Feel free to use larger potatoes, like Russet or Yukon Gold potatoes, but adjust the cooking time. Sweet potatoes are a great choice, too!
  • Garlic herb butter – Want mouthwatering Hasselback potatoes? Don’t skip the herb butter! Melted butter is mixed with Italian seasonings and fresh garlic, then brushed over each potato to help the middle become fluffy and indulgent.
  • Salt and pepper
  • Fresh parsley

How to make them

Wash and scrub the potatoes, then pat them dry.

Use a sharp paring knife to make slits in the potatoes, crosswise, being careful not to slice all the way through. Leave a half-inch base at the bottom.

Slicing tip: Place chopsticks or wooden spoons on each side of the potatoes, then slice until you hit the chopsticks. It’s the best way to avoid going all the way through! Check out this video tutorial from Food & Wine to see this technique in action.

Next, stir the melted butter, Italian seasonings, and garlic together in a bowl.

Place the sliced potatoes in the air fryer basket. Use a pastry brush to brush some of the garlic herb butter on top of each potato, then season them with salt and pepper. 

Air fry the mini Hasselback potatoes for 15 minutes, then brush with the butter again. Continue air frying until they’re tender. Enjoy!

Tips and tricks

  • Leave the potato peel on! Just remember to wash and scrub the potatoes really well before you start cooking.
  • Spray the potatoes with cooking spray to make the potato skins extra crispy.
  • If your potatoes are rolling around in the air fryer basket, slice off a small piece from the bottom to create a flat surface.
  • Leave space in between each potato in the air fryer. This helps the heat circulate evenly, yielding crispy and golden potatoes. Work in batches if the basket is too small.

Variations

Have fun with this recipe by mixing up the flavors! There is no wrong way to make Hasselback potatoes in the air fryer, as they welcome all kinds of different ingredients and flavor boosters. These ideas should help inspire you: 

  • Use fresh herbs – Swap the dry Italian seasonings for a blend of fresh chopped parsley, basil, thyme, chives, and/or dill.
  • Cheesy potatoes –  After brushing the second layer of herb butter on top, sprinkle the potatoes with shredded cheddar cheese or grated parmesan.
  • Add bacon – Sprinkle pieces of diced crispy bacon or prosciutto on top for an irresistible salty crunch!
  • Dairy free – Use olive oil instead of melted butter.
  • Add toppings – Once they’re done cooking, garnish the air fryer potatoes with a scoop of sour cream or chipotle crema, pickled red onions, fresh herbs, or cheese sauce. Or, get extra fancy and swap the sour cream for some creme fraiche and add a dollop of caviar! Perfect for New Years!

These crispy potatoes are fantastic on their own but can be upgraded into a crowd-pleasing snack with the right dipping sauces. Serve them with:

Ingredients

  • 5 small potatoes
  • ½ cup butter (melted)
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic (grated or minced)
  • Salt and pepper (to taste)
  • Fresh minced parsley (for serving, optional)

Instructions

  • Wash and scrub the potatoes. Slice the potatoes thinly leaving a half an inch base at the bottom.
  • In a small bowl, combine the melted butter, Italian seasoning, and garlic.
  • Place the potatoes in the air fryer basket and brush some of the garlic herb butter on top. Sprinkle the potatoes with salt and pepper.
  • Cook at 350 degrees for 15 minutes. Brush with the butter mixture again, and continue cooking for 10-15 minutes longer, until tender.
